Fresh Trout – Cut to Order
Our fresh trout is harvested from our natural spring-fed ponds throughout the year. Our master fish cutters prepare each order Butterflied – This classic restaurant cut is very popular with top chefs throughout the country. It is prepared boneless and headless, but whole. It allows the cook a lot of options. One of our Corporate Chef’s favorite preparations is a Mushroom Stuffed Butterfly Trout with Brown Butter Sauce.

Always keep fish refrigerated until ready to cook.
Baked: Bake for 10-15 minutes at 450 degrees. Trout should be flaky and pull apart easily when tested with a fork.
Grilled: A clean and grill with a bit of cooking oil is key for cooking fish. Grill over high heat for 4 minutes per side, turning gently with a large spatula.
NOTE: All shipments can expect at least two days for delivery.
We ship all of our orders via UPS on Mondays and Wednesdays to ensure you receive the freshest possible product. Online orders must be received before 8 a.m. to go out on that day. (Smoked Neapolitans and Smoked Salmon Filets are special order and will take longer before shipping out). Fresh fish orders are sent out on Monday and Wednesdays only.
Orders placed Thursday through Sunday will be sent the following week.
